Skin Glow Soup

The season for soups has *almost* arrived (as I write this in 90 degree SoCal weather). I will always be a soup person, whether it's currently 89 degrees or not. To prepare for the upcoming fall season, I wanted to bring back a fan favorite- the skin glow soup. It's got the skin benefits, and it's also a great recipe for your follicular or luteal phase. 

 

Ingredients:

Makes about 5 servings

  • 3-4 carrots
  • 1/2 butternut squash
  • 1 leek
  • 2 cloves garlic
  • 1 tbsp grated ginger
  • 32 oz veggie broth
  • 2 c cashew milk
  • 2 sprigs fresh rosemary
  • 2-3 sprigs fresh thyme
  • 1 tsp chopped fresh sage
  • salt
  • pepper
  • olive oil
  • parsley (optional)

 

Directions:

  1. Peel and chop the carrots and butternut squash. Chop the leek and garlic.
  2. Add olive oil to a large pot over medium heat. Once hot, add the chopped leek and carrots, and sauté for 5 minutes. Then add the garlic and ginger, and sauté for another minute.
  3. Add the butternut squash and veggie broth and bring everything to a boil. Once boiling, decrease the heat to medium low and add the herbs. Let everything simmer uncovered for 10 minutes. 
  4. Once the butternut squash is tender, blend the soup until smooth using a blender or immersion blender. Add the cashew milk and salt and pepper to taste.
  5. Serve with chopped parsley and crusty bread on the side. 

 

This recipe has minimal cleaning, and uses minimal dishes. It's surprisingly easy. Carrots and butternut squash are super high in beta carotene, the ultimate skin glow ingredient. I hope you like this recipe, enjoy! 🫶
