Spiced Apple Galette

Who says dessert can't also be functional? I love galettes because they're basically an easier version of pie, and you can easily swap fruits depending on your preferences or phase of your cycle. Apple is an amazing fruit for your luteal phase, so this apple galette is perfect for your luteal phase 😉

 

Ingredients:

Makes one apple galette

  • 3 apples (I've used honey crisp or granny smith)
  • 1 1/4 c gluten free 1:1 flour
  • Pinch of salt
  • 2 tsp coconut sugar
  • 4 oz cold butter (dairy free works!)
  • 1/2 tsp apple cider vinegar
  • 1/4 c cold water
  • 3 tbsp coconut sugar (again)
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
  • 1 egg

 

Directions:

For the crust:

  1. Add flour, salt, and 2 tsp coconut sugar to a food processor or bowl and mix to combine.
  2. Cut cold butter into cubes and add to bowl or food processor and beat/mix until the dough is crumbly.
  3. Add apple cider vinegar and begin to slowly add cold water while mixing until dough starts to come together and easily sticks together. 
  4. On a floured surface, roll dough into a ball, cover with plastic wrap, and stick in the fridge.

For the filling:

  1. Thinly slice apples, removing the core, and add to a large mixing bowl.
  2. Add 3 tbsp coconut sugar, all the spices, lemon juice, vanilla extract, and cornstarch.
  3. Mix until everything is well combined. 

Putting it together:

  1. Take dough out of the fridge and place onto a large piece of parchment paper.
  2. Roll out to about 1/4 of an inch circle.
  3. Add your apples to the center, leaving about 1 1/2 inches of the sides, then begin to fold the sides over the apples.
  4. Patch up any tears, it doesn't need to be perfect.
  5. Place the galette back in the fridge and in the meantime heat your oven to 375 degrees. 
  6. Once the oven is ready, take the galette back out, beat one egg, and brush the edges with the egg wash.
  7. Bake for 50-60 minutes, or until the edges are golden brown.

 

My favorite is to serve it with a a little cocowhip, but vanilla ice cream is of course, amazing as well. If you choose to cycle sync this dessert, you can switch out apples for blackberries or blueberries during your menstrual phase, cherries for your follicular, and raspberries or strawberries during your ovulatory.
