This has been my go-to breakfast when I need something high protein, that will keep me full all morning and even afternoon long. It's got 50 grams of protein, and has been tested and proven to be blood sugar balancing! This breakfast is also absolutely amazing for your luteal phase where you're burning more calories and need more food.
Ingredients:
Makes 1 serving
- 1 sweet potato
- 1 can tuna
- 1 egg
- 1 tbsp mayo
- 1 tbsp sriracha
- 1 tbsp dijon mustard
- pickled red onions
- dill
- everything bagel seasoning
- salt
- pepper
- paprika
- cooking oil
Directions:
- Bring water to a boil over high heat and boil your egg for 7-9 minutes (7 for a runnier center).
- Slice sweet potato into 1/2 inch slices lengthwise and remove skin if desired.
- Drizzle with a bit of cooking oil and season with salt and pepper.
- Air fry at 400 for 12-15 minutes.
- In the meantime, drain tuna then mix with mayo, sriracha, and mustard.
- Top the cooked sweet potato with the tuna and everything bagel seasoning on top.
- Air fry at 350 for another 2 minutes.
- Top the toasts with pickled red onion, the boiled egg, paprika, and lots of dill.
Feel free to add whatever mix-ins you like to your tuna. This is just a super quick and flavorful way I like to make my tuna. A drizzle of pesto on top or hummus would also be amazing, or sliced avocado. Enjoyy! 🫶
