If you've ever been to Joe and the Juice you've probably heard of their famous tunacado. I finally got to try the original NYC version this summer and can confirm the hype is warranted. I wanted to find a way to make it at home in a way that was easy, quick, and tasted just as good. And so, the tunacado wrap was born.
Ingredients:
Makes one wrap
- 1 5 oz can tuna
- 2 tbsp mayo
- 1 tbsp sriracha
- 1 burrito size tortilla (I used gluten/grain free)
- 1 tbsp pesto (homemade dairy free pesto recipe here)
- 1 roma tomato
- 1/4 avocado
- 1 handful spinach (optional)
Directions:
- Make your pesto if making from scratch and set aside. My dairy free pesto recipe can be found here.
- Open, then drain your can of tuna.
- Add the tuna to a separate bowl and combine with mayo and sriracha with a fork until everything is fully combined.
- Warm up your tortilla on a pan over medium heat for 2 minutes on each side.
- Slice your tomato and avocado into slices.
- Layer on pesto on the bottom half of the tortilla. If adding spinach, add it on top of the pesto.
- Then add your tuna mixture.
- Add tomatoes on top, and avocado on the front or backend of the tuna.
- Roll into a wrap.
- To seal in the wrap, you can add a tiny spritz of cooking spray to a pan and set the wrap with the visible tortilla facing down for 2 minutes on medium heat.
Super easy! It may take you a try or two to get how to wrap it into a burrito, but you will eventually get it. This is a perfect lunch for your ovulatory phase as well, and if you want a little extra veg, add some spinach before the tuna. Enjoy!! 🫶
