Summer Strawberry Arugula Salad

Salads are a MUST in the summer. If you're not a salad fan yet, it's just because you haven't tried the right salads yet. Allow me to introduce you to another salad that's fresh, bursting with flavor, and won't crash your blood sugar. Strawberries are the absolute best in the summer, and I'm fully taking advantage of it with this recipe.

 

Ingredients:

Makes one salad

  • arugula
  • 3-4 large strawberries
  • 2/3 avocado
  • 1/4 red onion
  • handful of walnuts
  • one salmon fillet
  • olive oil
  • dijon mustard
  • lemon
  • thyme
  • salt
  • pepper

 

Directions:

  1. Prepare your salmon with desired spices (I like to use dijon mustard, paprika, salt, pepper, thyme, and a little coconut sugar).
  2. Air fry at 400 for 10-12 minutes, or bake at 400 for 10-12 minutes.
  3. Prepare your dressing with 1/4 c olive oil, 2-3 tbsp lemon juice, 1 tbsp dijon and mix.
  4. Add salt, pepper, and thyme to taste and mix.
  5. Chop your strawberries into small pieces.
  6. Chop your avocado into chunks.
  7. Dice the red onion so you have thin strips. 
  8. Add arugula to your salad bowl, then add your strawberries, avocado, red onion, and handful of walnuts.
  9. Add your dressing on top, then mix.
  10. Lastly, add your salmon on top.

 

There are tons of healthy fats that will help keep you full, without having to eat something too heavy. The greens balance out the bit of fruit so you don't have that afternoon crash as well. This recipe is so easy to make for large groups as well, and will definitely be refreshing during the hot weather with an ice cold arnold palmer... I'm day dreaming now. 🫶
