Sweet and Sour Tofu/Chicken and Blistered Green Beans

This is a recipe that's easily meal prep-able but also super quick and easy if you're just sitting down! It takes less than 30 minutes to make, with the option of choosing chicken or tofu as your protein. This recipe falls into the follicular phase category thanks to the green beans, but you can easily change up the veg if you'd like.

 

Ingredients:

Makes ~4 servings

  • 2 blocks extra firm tofu OR
  • 2 chicken breasts
  • 1 12 oz bag green beans
  • 3-4 cloves garlic
  • 2 tbsp ketchup
  • 4 tbsp coconut aminos
  • 1/4 c white vinegar
  • 1/4 c maple syrup
  • 1/3 c water
  • salt
  • 2 tbsp cornstarch
  • neutral oil
  • red pepper flakes

 

Directions:

  1. If you have the time, press your tofu for 20 minutes to remove the water. Then, chop tofu or chicken into bite sized chunks. Season with 2 tbsp coconut aminos and salt. If using tofu, toss with 1 tbsp of cornstarch to coat everything evenly.
  2. Chop garlic into slices. Wash and dry green beans. Add the green beans and garlic to a baking sheet and season with a good drizzle of oil, salt, red pepper flakes, and a dash of coconut aminos. Broil for 6-8 minutes on the top rack of your oven. Keep an eye on the green beans, they should char slightly, but don't let them get too burnt. 
  3. Add a generous amount of oil to a pan over medium heat. Once hot, add your protein. Let it cook unbothered for 2 minutes, then you can rotate the sides to ensure everything cooks evenly. Remove the tofu/chicken and oil from the pan once done.
  4. With the pan off the heat, add the remaining 2 tbsp coconut aminos, ketchup, water, white vinegar, maple syrup, and 1 tbsp of cornstarch and mix until cornstarch is dissolved. 
  5. Place the pan back on medium heat and let it come to a simmer. Once the sauce has thickened after about 4 minutes, turn off the heat and add your protein to the pan. Coat the protein in the sauce.
  6. Serve with the green beans and rice on the side.
