If there's one thing about me, it's that I'm a pizza lover. But I'm also a sweet potato lover. I love a balance of health and comfort food, and this pizza toast is IT. Sweet potato was my superfood when healing my gut. It's so versatile, and it makes a really amazing pizza toast! You can do ANY toppings your heart desires, but for the purposes of this recipe, I did mushrooms and red onion.
Ingredients:
Makes 2 slices of pizza toast
- 1 sweet potato
- arrabbiata sauce (you can use any sauce)
- dairy free feta
- handful mushrooms
- 1/4 red onion
- olive oil
- salt
- pepper
- pizza seasoning (optional)
Directions:
- Wash, then slice your sweet potato into 1/2 inch slices. You can slice the sweet potato slices on both sides to ensure it lays flat. Removing the skins are optional.
- Drizzle with olive oil, salt, pepper, and pizza seasoning if you wish on both sides.
- Air fry or bake at 400 degrees for 12-15 minutes.
- In the meantime, slice your mushrooms and add a drizzle of olive oil to a pan over medium heat.
- Sauté the mushrooms for ~5 minutes.
- Slice the red onion into thin slices.
- Turn your oven on to the broil setting.
- Get your sweet potato out of the oven/air fryer and add a generous amount of tomato sauce followed by dairy free feta.
- Top with mushrooms and red onion.
- Broil in the oven for 2-3 minutes maximum, until the cheese starts bubbling.
This under 20-minute recipe is so easy yet you'd never expect it by the flavor. It is the healthiest pizza you'll probably ever have, yet still incredibly delish! To make this dish a balanced meal, add a side salad with protein of choice. Enjoyyy 🫶
