Sweet Potato Pizza Toast

If there's one thing about me, it's that I'm a pizza lover. But I'm also a sweet potato lover. I love a balance of health and comfort food, and this pizza toast is IT. Sweet potato was my superfood when healing my gut. It's so versatile, and it makes a really amazing pizza toast! You can do ANY toppings your heart desires, but for the purposes of this recipe, I did mushrooms and red onion.

 

Ingredients:

Makes 2 slices of pizza toast

  • 1 sweet potato
  • arrabbiata sauce (you can use any sauce)
  • dairy free feta
  • handful mushrooms
  • 1/4 red onion
  • olive oil
  • salt
  • pepper
  • pizza seasoning (optional)

 

Directions:

  1. Wash, then slice your sweet potato into 1/2 inch slices. You can slice the sweet potato slices on both sides to ensure it lays flat. Removing the skins are optional. 
  2. Drizzle with olive oil, salt, pepper, and pizza seasoning if you wish on both sides.
  3. Air fry or bake at 400 degrees for 12-15 minutes.
  4. In the meantime, slice your mushrooms and add a drizzle of olive oil to a pan over medium heat.
  5. Sauté the mushrooms for ~5 minutes. 
  6. Slice the red onion into thin slices. 
  7. Turn your oven on to the broil setting.
  8. Get your sweet potato out of the oven/air fryer and add a generous amount of tomato sauce followed by dairy free feta. 
  9. Top with mushrooms and red onion.
  10. Broil in the oven for 2-3 minutes maximum, until the cheese starts bubbling. 

 

This under 20-minute recipe is so easy yet you'd never expect it by the flavor. It is the healthiest pizza you'll probably ever have, yet still incredibly delish! To make this dish a balanced meal, add a side salad with protein of choice. Enjoyyy 🫶
