I know how hard it can be to eat healthy when all you can think about is getting ANY food in your belly, stat. I've been in the situation so many times that I literally gave myself a mini MTB trying to sift through my options of whether to eat healthy, or make the drive to get healthier takeout, or if I should just say fuck it and order actual takeout. Not anymore! This noodle soup ticks all the boxes of coziness, comfort, and health. Make it during your luteal or menstrual phase, or anytime you need to eat ASAP.
Ingredients:
Makes one serving
- 1 tbsp miso paste
- 2 tbsp tahini
- 3 tbsp coconut aminos
- 1 clove crushed garlic
- pinch of salt
- one block gf rice noodles
- 1/4 block tofu
- 1 egg
- green onion
- drizzle of chili oil
Directions:
- Prepare your toppings. For a jammy egg, boil for 7 minutes. Take your tofu and smash it into crumbles. Season with a splash of coconut aminos and cook in the air fryer or on the stovetop until slightly browned, about 3 minutes.
- Add the miso, tahini, garlic, and coconut aminos to your bowl. Add a splash of very hot water. Mix until miso and everything is combined.
- Add your noodles on top and fill the bowl with the very hot water until noodles are completely submerged. Add a pinch of salt to taste. Loosen the noodles with chopsticks as they soften.
- Use your chopsticks to ensure the soup is well combined and add your toppings of choice.
The noodles should soften within 1-3 minutes depending how hot your water is. The hotter the faster! I'm obsessed with using this new chili oil on top by Algae Cooking Club. It's made with algae oil, so it's slightly buttery, has healthy omegas, and isn't too spicy. Enjoy!! 🫶
