Thai Curry Ramen

We're combining two of my absolute favorite foods... Thai curry and ramen if you haven't guessed. This Thai curry ramen is specially made for your luteal phase with the additions of cauliflower, onion, and sweet potato. That being said, depending on the phase of your cycle you're on, you can change the veggies as you need. For example, if you're in your menstrual phase, add mushrooms and kale. This recipe is super creamy and packed with flavor, and super easy to make.

 

Ingredients:

Makes ~4 servings

  • 3 c veggie broth (or chicken broth)
  • 2 c full fat coconut milk
  • 2-3 tbsp red curry
  • 1/2 sweet onion
  • 1 red bell pepper
  • 1/2 cauliflower
  • 1/2 sweet potato
  • 2 cloves garlic
  • 1 tbsp grated ginger
  • 2 tbsp coconut aminos
  • 2 tbsp coconut sugar
  • Juice of 1 lime
  • 1/2 block tofu
  • ramen noodles (single serving kind)
  • salt
  • cooking oil
  • green onions
  • cilantro
  • soft boiled egg

 

Directions:

  1. Prepare your vegetables. Finely slice onion and red bell pepper. Peel, and chop sweet potato into bite sized cubes. Chop and wash cauliflower into bite sized florets. Mince garlic. Chop tofu into bite sized cubes.
  2. Add a drizzle of cooking oil to your large pot over medium heat. Once hot, add the onion and sauté until softened, about 2 minutes.
  3. Add the garlic, ginger, and curry paste and stir together until everything begins to combine.
  4. Add the veggie broth, coconut milk, coconut aminos, coconut sugar, red bell peppers, cauliflower, and sweet potato. Bring to a boil over medium high heat, then decrease the heat to low. 
  5. Add salt to taste and the lime juice and let that simmer for at least another 5 minutes. You can choose to add your tofu here or at the end when serving.
  6. In the meantime, prepare your ramen noodles according to the package, and soft boil the egg for 7 minutes if desired. Once done cooking, drain the water to stop the cooking. 
  7. To serve, add your ramen noodles to your bowl, followed by the curry, half an egg on top, a handful of tofu, and option to add some chopped green onion and cilantro on top.

 

This is such a nourishing and delicious recipe you'll love at any point! It's completely dairy and gluten free if you use gluten free brown rice noodles. Instead of tofu, this recipe would also go well with chicken, shrimp, ramen style pork, or omit the tofu.  Enjoyy! 🫶
