The Breakfast Salad You'll Actually Like

Listen, I used to be a salad hater. A MAJOR salad hater. Then, I realized I was just not eating the right types of salads. This breakfast salad makes the "Salads I Could Actually Eat Every Day" list. Just try it once. Just one time can't hurt ya! Pair it with a little pastry and latte if the thought of health and wellness too early in the morning stresses you out. Personally, I'm kind of loving a breakfast salad. Not too heavy, and it's going to be perfect for hot summer days. And there's lots you can add or subtract from it! It's customizable for you. 

 

Ingredients:

Makes one salad

  • 2 large handfuls of chopped kale (you can substitute kale for arugula)
  • 5 peewee potatoes (you can use other potatoes if you wish)
  • 2 oz wild smoked salmon
  • 1/4 avocado
  • 1 egg
  • olive oil
  • lemon
  • salt
  • pepper
  • everything bagel seasoning
  • herbs de provence

 

Directions:

  1. Prepare the potatoes by washing, chopping into bite sized pieces (if needed), and drying.
  2. Toss with a drizzle of olive oil, salt, pepper, and herbs de provence (measure to taste).
  3. Bake at 400 for 10 minutes, or air fry at 400 for 10 minutes.
  4. Meanwhile, prepare your egg. I like to cook mine over easy.
  5. Add your kale to a bowl. Massage the kale until it wilts slightly.
  6. Drizzle with olive oil, lemon juice to taste, and salt and pepper to taste. Toss lightly.
  7. Add your smoked salmon, avocado, potatoes, and egg to a salad bowl. 
  8. Sprinkle everything bagel seasoning on top.

 

Voila. A breakfast salad! As I mentioned before, feel free to change it up as you wish. Don't like smoked salmon? (First of all that's sad) Substitute some breakfast sausage instead. You can add tomatoes, onions, capers.. whatever reminds you of breakfast. I like to pair my breakfast salad with a little fruit and yogurt bowl for some extra sustenance.
