If I ever eat fried rice, this is the fried rice I eat. Turmeric is anti-inflammatory, coconut rice adds some healthy fats, and pineapple is also anti-inflammatory, has lots of antioxidants and can even help your digestion! Pair this rice with some broccoli or broccolini plus protein of choice and you've got a fully balanced meal 🍍
Ingredients:
Makes about 5 servings
- 1 c long-grained rice like jasmine rice
- 1/2 c water
- 1/2 c full fat coconut milk
- 1 red bell pepper
- 1 c pineapple
- 1/4 white or yellow onion
- 2 green onions
- 4-5 cloves garlic
- 2 tsp fresh ginger
- 1 jalepeño (optional)
- 1 tsp turmeric
- 2 tsp salt
- pepper to taste
- 2 tbsp olive oil
Directions:
- Wash rice and transfer to rice cooker.
- Add 1/2 c water and 1/2 coconut milk, then cook according to rice cooker.
- Dice red bell pepper, white onion, green onion, and pineapple into small chunks.
- Mince jalepeño and garlic, and grate 2 tsp worth of fresh ginger.
- Heat olive oil on a large pan over medium heat.
- Once hot, add white onion and red bell pepper and cook down for a few minutes.
- Then add garlic and ginger and sauté for 2 minutes.
- Add your turmeric, salt, and pepper and sauté until combined.
- Turn the heat down to low and add your rice, pineapple, jalepeño, and green onions.
- Mix until everything is combined.
I like to add sesame seeds and a little cilantro on top if you want to make it pretty. I'd normally think fried rice is on the unhealthier side, but not this recipe! I paired this rice with a little tofu and homemade teriyaki sauce and it hit the spot. Basically any protein would go well with this recipe, just don't forget a side of veggies 🫶
