Vegan Bolognese

Vegan Bolognese

I've been making this vegan bolognese recipe for YEARS. It's one of my favorite comfort foods of all time. I'm not huge on fake meats, but find it completely fine to have them from time to time. Balance, besties. You're going to love this pasta recipe even if you're not vegan!

 

Ingredients:

Makes about 4-6 servings

  • 1/2 diced yellow or white onion
  • 5 crushed garlic cloves
  • 1 lb vegan ground beef
  • 1 28 oz jar marinara sauce or pasta sauce
  • 2 14 oz cans diced or whole tomatoes
  • 1-2 tbsp Calabrian chili paste (optional)
  • 2 tsp Italian seasoning
  • 1 package gluten-free spaghetti
  • olive oil
  • salt

 

Directions:

  1. Add about 2 tbsp of olive oil to a large pan on medium heat.
  2. Add diced onions and sauté for a couple minutes.
  3. Add garlic and sauté until onions are translucent, about a few more minutes.
  4. Add defrosted vegan ground beef and crush up into crumbles. Cook according to package.
  5. Add your marinara sauce, tomatoes, and chili paste. Mix until well combined.
  6. Add Italian seasoning and salt to taste. Let simmer for about 15-20 minutes on low heat.
  7. Meanwhile, cook your pasta according to the directions. 
  8. Add cooked pasta to a pasta bowl, followed by a generous serving of the bolognese, and Italian seasoning or nutritional yeast on top. 

 

How easy is that!? So good, so comforting, my mouth is drooling right now. You can absolutely substitute the vegan beef for regular beef as well. My absolute favorite gluten-free spaghetti is linked here. I really prefer this one to others as it doesn't break apart easily like other brands. It really tastes like the real deal.
