This luteal phase recipe is so comfy and warming. The luteal phase is all about reaally beginning to turn to nourishing foods, and chilis are just that. I love this white bean chili with some tortilla chips, or crusty bread. You can also add shredded chicken to this chili if you want to amp up the protein, but this recipes is SO delicious on its own.
Ingredients:
Makes about 5 servings
- 1/2 onion
- 3 cloves garlic
- 1 jalepeño
- 4 cans cannellini beans
- 2 c veggie/chicken stock
- 1 can/1 husk corn
- juice of 2 limes
- 1 tsp cumin
- 1 tbsp oregano
- olive oil
- salt
- cilantro (optional)
- avocado (optional)
- goat cheese (optional)
Directions:
- Add olive oil to a pot over medium heat.
- Chop onion and mince garlic and jalepeño, then add the onion, cumin, and oregano to the pot.
- Sauté until translucent, then add garlic and jalepeño and sauté for another minute.
- Add stock to the pot, followed by 3 cans of beans after draining and rinsing.
- Give everything a stir, then bring the pot to a boil on high heat, then decrease heat to medium low, and let the pot simmer for 25 minutes.
- Decrease heat to low, and add your last can of beans to a blender with one or two ladles of soup, then blend. Don't liquify too much.
- Add the blended beans to the pot along with the whole corn and stir.
- Add the lime juice and salt to taste.
- Serve with tons of cilantro, avocado, and goat cheese to the top.
I'm literally drooling as I type of this recipe 😂 UGH, it's one of my absolute favorites. Feel free to sub any cheese you'd prefer. If you want to add chicken, a couple breasts would be perfect. Great Northern beans would also work well for this recipe. Enjoyyy! 🫶
