Yuzu Glazed Salmon and Garlicky Blistered Green Beans

You can call yourself chef after making this recipe because it's giving restaurant vibes but is easily made at home. Yuzu is a Japanese citrus fruit and is what's going to take this recipe up a notch. If you don't have a Japanese or Asian market near you, don't worry, I'll share some alternatives at the end of this recipe. 

 

Ingredients:

Makes 2 servings

  • 2 salmon fillets
  • 1/3 c ponzu (I used this one)
  • 2 tbsp coconut aminos
  • 1 tsp rice vinegar
  • 2 tbsp honey
  • 4 cloves garlic
  • 1 tbsp cornstarch
  • 2 yuzu fruits (see below if this is not available for you)
  • toasted sesame oil
  • salt
  • red pepper flakes
  • rice
  • sesame seeds (for serving)
  • green onion (for serving)

 

Directions:

  1. Preheat oven to 400 degrees.
  2. Prepare your salmon glaze and add the ponzu, coconut aminos, rice vinegar, honey, and 2 crushed garlic cloves to a pot over medium heat. 
  3. Add the zest of one yuzu fruit and the juice of 2 yuzu fruits to the pot.
  4. Bring to a simmer, then mix 2 tbsp of water with the cornstarch and add to the pot. Stir occasionally for ~5 more minutes, until the sauce has thickened, then remove from the heat. 
  5. Season your salmon with oil and salt, then add a generous spoonful of the yuzu glaze on top. Bake for 10-12 minutes.
  6. In the meantime, wash, then trim the ends off your green beans.
  7. Slice the remaining garlic thinly and add the green beans and garlic to a baking sheet.
  8. Drizzle with toasted sesame oil, salt, and toss with your hands.
  9. After taking the salmon out, set your oven to broil, and broil the green beans for 3-5 minutes on one side, then toss everything half way through with tongs, and broil for another 3-5 minutes. Green beans should be charred slightly.
  10. Once the green beans come out of the oven, toss with a splash of the ponzu, and add a dash of red pepper flakes if desired.
  11. Serve the salmon with more yuzu glaze, sesame seeds, and green onions on top, the green beans, and rice.

 

If you do not have access to yuzu fruit, don't worry! Stick to grabbing a ponzu sauce made with yuzu. You can make this recipe even easier and buy a yuzu barbecue sauce and skip making the glaze yourself-- here's one example. You can also buy 100% yuzu juice off of Amazon and add in 1 tbsp to the pot while making the glaze, and just skip the zest. This yuzu glaze will work with chicken, steak, and tofu as well! Enjoyyy 🫶
