I created this recipe for my follicular phase, and it's super simple to make. Zucchini, green pea, and a bit of lemon provide support during your follicular phase. I've recently been adding goat cheese back into my diet and find that it has agreed with my gut and acne prone skin quite well. Goat cheese adds such an important depth of flavor to this dish, but you're welcome to skip it if cheese is not in your journey right now.
Ingredients:
Makes about 6 servings
- 2 zucchinis
- 10 oz green peas (frozen or fresh)
- 1/2 white onion
- 1 box (12 oz) penne pasta
- 1/4 c goat cheese
- 1/4 c chopped basil
- Juice of 1/2 lemon
- 1 tbsp lemon zest
- salt
- pepper
- olive oil
Directions:
- Preheat oven to 400 degrees.
- Chop zucchini and onion into thin slices and add to a baking sheet.
- Drizzle with olive oil, salt, pepper, and use your hands to combine with the veggies thoroughly.
- Bake for 30 minutes.
- In the meantime, boil pasta according to package, adding in your green peas at the last 5 minutes.
- Drain, then add to a large mixing bowl along with goat cheese, cooked veggies, lemon juice, lemon zest, and chopped basil.
- Add salt to taste, and gently combine until everything is well incorporated.
How easy is that!? If you do want to add a protein here, chicken or crispy chickpeas would work great. Feel free to add a little more goat cheese or basil on top. You can even add some red pepper flakes if you like a little heat. Enjoyyy 🫶
